This is based on a study that lasted 10 days. It could be that the weekend has a correlation with both affective empathy (empathy based on shared emotional experiences) and drinking.
It’s also done purely on college students aged 18-40 in a specific locale. I wouldn’t read into it too much, but it’s an interesting hypothesis.
