JanoRis ( @JanoRis@kbin.social ) 4•2 years agoSo it seems that during the digestion in stomach acid the enzyme myrosinase is released from these plants (https://www.diindolylmethane-dim.com/formation.htm) responsible for the intermediate product DIM.
This means we could have DIM present in acidic meals of these vegetables, like for example Kimchi

Twipped ( @Twipped@artemis.camp ) 7•2 years agoDIM doesn’t increase estrogen, it reduces it. It forces the body to metabolize estradiol into 2-hydroxyestrone, which cannot be converted back to estradiol and has lower binding affinity, so it just gets pissed out. It’s often used for breast and thyroid cancer treatments.
So yeah, this could be really bad for women.
