Carrots, sweet potato w/oil and a very light sprinkle of caster sugar (for caramelizing) Potato, garlic, onions. w/oil, dried onion and salt. Cauliflower, Broccolini, Zucchini w/the excess oil/juice from my last roast prep. Nothing added except another 40 minutes of cooking. I’m finding the longer I’m roasting veggies the better they get.
