A lot of it is because of safety. It’s harder to slip underneath the water level if the tub is just about the length of your legs, this is especially important when your bath is particularly relaxing

I don’t have an answer, but as a tall guy, the moment I buy a house I’m putting a proper-sized bathtub in.

I stayed at a hotel with a huge claw foot tub once. It was divine.

Cost I guess. Also it would take loads of water to fill a deeper bathtub.

Adding to what others said: if you’ve ever used a bathtub you’d realize that you always use your legs to keep yourself above water. If they made it longer it would be very easy for your head to slip underwater and difficult for you to kick yourself back up with the end of the bathtub.
