Not to dissuade you from playing PF2e if that’s really what you want but neither 5e or PF2e have good mechanical support for roleplaying/telling stories, so if your reason for switching systems is for that, you will likely be disappointed.
I’m not actually switching, joining a new group. But for me roleplaying doesn’t need in game mechanics roleplaying can just happen in any game. Of course I don’t think I’ve played a system that has mechanics for roleplaying so I can’t really speak to that. Though if you have a suggestion I’m always interested in looking at different systems!
