Would this be a good way to browse YouTube privately and avoid data profiling? I wouldn’t be signed in of course.

It would certainly help protect against profiling, but I would definitely recommend a privacy-respecting frontend like an Invidious instance, or a client like Freetube on desktop or Newpipe Android. One of the Invidious developers recently got hit with a cease and desist by Google because they were cutting into Google’s tracking so effectively, but the order was based on faulty premises and clearly meant to be intimidation so it’s largely been ignored and Invidious is still highly active
